Course Description

Anatomy and Physiology
This course provides an overview of the human body, illustrating the levels of organization from the cell to the whole-body organism. It discusses the eleven systems and their interdependence for optimal functioning. It introduces first principles of microbiology and the basis for understanding disease processes and interventions.

Fundamentals of Nutrition
This course covers foundational principles of nutrition including food groups and nutrient values. It identifies the major components and functions of macronutrients, micronutrients, enzymes, and water; and, discusses their roles in the process of digestion, metabolism, and performance. It covers the science of food combining, menu planning, and food selection and preparation to preserve maximum nutrition.

Digestion
Understanding the inseparable connection between proper digestion and health is the primary objective of this course. It provides a comprehensive study of the structure and physiology of the alimentary tract in the process of digestion. It identifies foods considered most offensive in producing adverse reactions as well as foods that are easily assimilated and digested for efficient absorption and waste elimination. This course also discusses the effects of toxicity, its causes and prevention including nutritional digestive aids, and lifestyle modalities (i.e. water, exercise, etc…) to improve digestion and regularity.

Biochemistry
Students will learn the fundamentals of chemistry. Topics covered include chemical composition of: carbohydrates, fats, proteins, vitamins, minerals, and their metabolic processes. It provides an in-depth understanding of how foods affect the body at the cellular level as well as how disease conditions are produced and prevented.

Preventive Nutrition
Maintaining balance or homeostasis is nature’s way to good health. Learning how to assist nature with eight foundational principles is key to disease prevention and lifestyle management. This course discusses the therapeutic values of each of these principles and how they affect body processes for optimal functioning.

Cellular Biology
This course builds on biochemistry. Understanding the importance of cell health (from the least and simplest to the largest and most complex), students will learn to establish a biological terrain that is consistent with cell and tissue needs to support normal growth and development for healthy structure and function. It discusses the effects of free radicals, toxicity, oxygen deficiency, and DNA synthesis, as well as epigenetics and its effect on gene expression.

Lifecycles – Nutrition
This course studies three groups of individuals and their dietary and lifestyle needs.

  • Paediatric Nutrition – Discusses the nutritional needs of a developing fetus into the years of new born through teenage years as well as how to handle problems with picky and fussy eaters. It also covers environmental and social needs that are essential to healthy growth and development. Common childhood diseases are also discussed.
  • Geriatric Nutrition – Focuses on the changing nutritional needs of the aging population and some of the challenges they face with degenerative diseases. It discusses lifestyle issues that promote wellness and longevity.
  • Athletic Nutrition – This course covers the mechanics of health and fitness from a commonsense perspective. It discusses aerobic and anaerobic exercise, muscle fibres, training and endurance, overtraining, as well as the structural, chemical, and mental benefits of exercise. It also addresses issues of injuries and rehabilitation.

Allergies
This course provides a comprehensive look at the far-reaching effects of allergies. It differentiates between allergies, food sensitivities and intolerance and identifies the most common foods that trigger a reaction. How to test, manage, and prevent allergies is the primary objective of this course.

Pathology and Nutrition
Pathology is the study of disease and suffering. This course provides an in-depth study of diseases (including heart disease, cancer, high blood cholesterol, high blood pressure, arthritis, diabetes, etc…), their causes and symptoms; and looks at how to positively affect physiological processes with clinical practice using nutritional therapy and lifestyle modification techniques.

Mental Health
Stress is identified as one of the leading factors in lifestyle diseases and premature death. This course covers the fundamental principles of identifying stress and stressors in our modern lifestyles. It explains the physiological responses of stress on the human body as well as the mental, emotional, and social ramifications; and offers workable solutions to manage stress and depression effectively.

Clinical Nutrition and Research Literature
In this course you will learn the importance of quantitative and qualitative values of nutrients at the molecular level. The material discusses some of the latest scientific discoveries in nutritional research as well as how to analyze and interpret published data and provides opportunities to practise writing and presenting a scientific report/paper.

Symptomatology
Understanding the interconnectedness of the body systems and organs, this course focuses on establishing a biological terrain that supports overall health and a sense of wellness. It explores plausible causes of diseased conditions and seeks to eliminate unhealthful or offensive conditions and/or habits; and initiates conditions that are health promoting. Students will be given case studies to analyze and make recommendations based on course material already learned.

Natural Remedies
How to manage and prevent diseases effectively without side effects leading to further damage and toxic waste build up is essential to health. This course provides hands-on training in knowing what, when, how, where, and why to apply poultices, herbal preparations, kitchen herbs, water applications, etc… to alleviate, avoid, or prevent pain, swelling, bleeding, and congestion.

Hydrotherapy/Water pH
As an age-old antidote water has been used for centuries to sustain life and restore health. This interactive course focuses on the internal benefits of water as well as the external applications to help the body maintain homeostasis. Topics covered include maintaining the right blood pH, and understanding the physiological effects of hot and cold through the applications of fomentations, contrast baths, and friction rubs.

Environmental Health
In the 21st century, we have entered into a level of toxicity and environmental pollution such as never was encountered in all history. Creating awareness of this problem, understanding how dietary choices contribute to environmental damages, and reviewing solutions to reverse environmental damages is the focus of this course.

Jurisprudence/Business Management
Understanding the laws that govern the practice of nutrition consulting is mandatory to legally operate a successful business as nutritionists/consultants. This course discusses how to operate a successful practice within the guidelines and jurisdiction of government policies and regulations. It also reviews marketing and advertising strategies as well as ethical guidelines in building a successful and rewarding career.
